Single-stage guiding systems with Isernhäger-devices provide your company with the possibility to have a perfectly matured sourdough at your disposal within little time periods.
The Detmold Single-stage guiding system and the salt-sour guiding system need 15 and 18 hours to reach maturity, the Berlin Short-sour guiding system only three hours.
